FoodScan™ has received AOAC approval for the analysis of moisture, fat, and protein in meat and meat products using FOSS artificial neural network (ANN) prediction models. The method number is 2007-04.

The approval allows food producers to exploit the leading meat analytical solution with full confidence in an officially approved method.

Collaborative study
The approval is based on a collaborative study conducted to evaluate the repeatability and reproducibility of the FOSS FoodScan NIR spectrophotometer with ANN calibration model and database for the determination of fat, moisture and protein in meat and meat products.
The ground samples were put in a sample dish and placed in the FoodScan. The operator ID was entered, the meat product profile within the software was selected and the scanning process initiated by pressing the start button. Results were displayed for % (g/100g) fat, moisture and protein. Ten blind duplicate samples were sent to 15 collaborators in the United States. The within-laboratory RSDr (repeatability) ranged from 0.22 to 2.67% for fat, 0.23 to 0.92% for moisture and 0.35 to 2.13% for protein. The between-laboratory RSDR (reproducibility) ranged from 0.52 to 6.89%for fat, 0.39 to 1.55% for moisture and 0.54 to 5.23% for protein.

Artificial Neural network(ANN)

ANN plug and play calibration

FoodScan is equipped with an ANN calibration making FoodScan a “plug & play” solution. It is ready to run immediately – no need for gathering many samples required for a typical PLS calibration. The ANN calibration covers nearly all type of meat and meat products, from raw meat to finished products.

RINA

Monitoring and support via the internet

The FoodScan Meat Analyser and other NIR technology-based instruments are supported by the RINA software suite. This provides an internet-based network connecting individual instruments to a control centre. NIR experts at the centre perform monitoring and management tasks remotely, allowing the local user to get on with routine analysis operations without having to worry about instrument performance or reliability of results.
